Opening the Vault: Craft brewpub Vault Brewing Co. celebrates launch in Easton

Vault Brewing Co. is set to open a new location at 225 Ferry Street in Easton this weekend, featuring their renowned craft brews and chef-curated eats.

EASTON, Pa. — The Vault is open, and brewpub fans are flocking to Easton to enjoy some of the most celebrated beers, cocktails, and dishes across the foodie scene in the city.

Vault Brewing Company's new Easton location celebrated their soft launch Thursday, Dec. 5 in anticipation of the official opening on Saturday, Dec. 7, with guests enjoying their first tastes of the establishment’s lauded drafts, crafty cocktails, and indulgent snacks and entrees.

And while the official opening is a little later than originally intended, based on initial reactions by the crowd on Thursday, it was all well worth the wait.

“We are THRILLLED to welcome you all to our newest space in the heart of downtown Easton. Join us this Saturday, from 11:30 a.m. – 11 p.m. for Vault Brewing craft beer, local PA wines & spirits, and seasonal dishes from our executive chef Will Porras. This has been a huge undertaking of ours, and we cannot wait to share it with you all,” Vault announced on their Instagram page Thursday.

Whether they were there to sample a local cheese and charcuterie plate paired with a 5 Cees IPA, brewed with chinook, citra, centennial, cascade, and Columbus hops; or perhaps a beet salad and a glass of Blueberry Drips, a creamsicle IPA with blueberry puree, Madagascar vanilla, and milk sugar hopped with Cryo, Mosaic, and Meridian hops.

Sharable snacks include highlights like the calamari with pickled jalapeno, candied ginger, fresh herbs, cilantro buttermilk dress, sriracha roasted peanuts, mango, radish and kumquats; the Thai Brussels sprouts with satay sauce, Thai pickled vegetables, sriracha roasted peanuts, and Blue Moon Acres microgreens; or the classic 12-inch pretzel braid with a side of beer cheese.

Of course, you can always upscale a classic with a Vault Burger, with caramelized onions, Vault sauce, dill pickles, Fulper Farms aged cheddar, and organic lettuce and tomato on a brioche bun. Pair it with a Weekend Effect – an American lager brewed with American 2-Row malt, Pilsner malt, brown rice, and Sterling hops – for a craft take on a pub classic.

The point is, if you’re looking for a tasty treat to chase your craft beer – developed by Head Brewer Chris Sayko – you’re in the right place.

Oh, if you’re at a loss for what to order, Vault Brewing Co. Director of Operations Eric Leypoldt has you covered – try their Of Hops and Clouds, the brand’s number one selling Hazy Pale ale, with a buffalo cauliflower side, or a Brown Sugar Buffalo Flatbread.

If you’re feeling particularly festive, Vault is opening its doors just in time for the holiday season with specialty-featured cocktails.

Naughty But Spice features Boardroom Spirits’ Northbound Bourbon, spiced honey syrup, lemon and orange juice, and orange bitters.

Feeling a bit more fizzy? Try a Ging-gle Juice, with Boardroom Spirits’ Irvine’s American Dry Gin, pomegranate juice and orange juice, honey, and sparkling water.

If you’re aiming for something more adventurous, there’s You Filthy Animal, with Boardroom Spirits’ Highlands Tequila, jalapeno syrup, and cranberry and lime juice.

Leypoldt said the company is thrilled to make its way into Easton and bring with it the expected high-quality brews and food for which its Yardley location is known.

“It's just a great town," Leypoldt said of Easton during an interview in August 2024. "It kind of mimics what we're doing in Yardley; we're on the river here as well.

“We just saw a great opportunity in Easton. We love the whole vibe of the city,” Leypoldt said.
