Sweet and savory treats: Crepes at Casa to offer creative spin on French classic

And crepes make it three. Restaurateur Andrea Rincon is set to open her third establishment, Crepes at Casa in the Easton Public Market this spring.

EASTON, Pa. — A local entrepreneur is bringing an innovative take on a French classic to Easton Public Market this spring.

Andrea Rincon, owner of Queso at Casa and Casa 401, is bringing her sweet and savory sensibilities to the market with the launch of Crepes at Casa in early April.

It will offer up a variety of indulgent crepes crafted from high-quality ingredients.

Rincon will take over the space previously occupied by Taylor Taco. The spot was handed over to Crepes at Casa last week.

The arrival comes in the wake of two other vendors, HousePlanted and Mangia Carne, which will open soon as part of a refresh for the market in the spring.

“I’m thrilled to join the vibrant Easton Public Market community and bring some of our customers' favorite crêpes while introducing new and exciting options," Rincon said.

"I look forward to sharing my love of crêpes with market visitors and showcasing Latin American flavors and unique recipes on our menu.

"My vision for Crêpes at Casa is to create a warm, inviting space where people of all ages can enjoy something delicious— whether they’re grabbing a quick bite or indulging in a sweet treat, any time of day, from breakfast to dinner.”

Among updates for Easton Market

Taylor Taco owner Matt Martin expressed his support for Rincon’s new spot while also reassuring he will continue to be a presence at the market.

“Stepping away from Taylor Taco was a tough decision," Martin said. "But as I focus more on More Than Q and streamline my business ventures, I’m happy to see Andrea taking over the space.

“I know she’ll bring something really special to the market, and I look forward to seeing her thrive here.”

According to a release from the Greater Easton Development Partnership — the non-profit landlord to Easton Public Market vendors — the addition of Crepes at Casa is part of a mix of vendor updates coming to the market this season.

It will serve as a reflection of the market’s ongoing commitment to offering up diverse, high-quality food experiences, the release said.

“We are excited to welcome Andrea and Crepes at Casa into the market this spring," Greater Easton Development Partnership Executive Director Jared Mast said.

"And hope that folks will come visit us and our new vendors as we move back toward a full house of great vendors and great programming.”

Standard, seasonal, sweet crepes

While the menu has yet to drop, fans of Queso at Casa should be eager to try out Rincon’s new spot, especially if it continues with the creative concepts offered there.

At the moment, Queso at Casa has three special seasonal crepes on the menu: the Sunrise Crepe, the Mediterranean Delight Crepe and the Salted Maple Caramel Crepe.

The Sunrise features scrambled eggs with ham, potatoes and melted Gouda cheese, topped with tomatillo peach salsa, and is served with a side of fresh fruit.

The Mediterranean Delight is filled with prosciutto, salami, sweet gherkins, sun-dried tomatoes, house-made pesto, melted Gouda cheese, and a rich balsamic glaze.

And for a sweet treat of a dessert, the Salted Maple Caramel is stuffed with bananas, topped with salted maple caramel and pecans, and served up with vanilla ice cream.
